Popcorn 2 Ways

Vegan MoFo: It's that time of year again! If you don't know what's up, allow me to give you a brief overview: short for the Vegan Month of Food, Vegan MoFo is an annual blogging event about all things vegan. Participants are given daily prompts and then post about it. If you need more info check out the MoFo website and get hip (click here and then come back). Today’s prompt: Cartoon Inspired.

No lie - I did not like popcorn as a kid. Now it's my go-to snack for the occasional TV night. But I don't like just any popcorn. I only like the popcorn my partner makes on the stove top and I love to add a lot of flavor.

Today I'm sharing with you my two fave popcorn flavors and how to make this snack yourself (it's way cheaper than buying microwave or pre-popped corn).
Basic Popcorn1/2 c kernals
2 tbsp canola oil
get your oil hot in a big ass pot with a lidadd the kernels and lid uplisten for the pops; it's gonna pop a little, then a lot, then a little again. Ju…

Cajun Style Sweet Creamed Corn

I love Ray the Lightning Bug in The Princess and The Frog. He's selfless, a hopeless romantic, and missing quite a few teeth. Pretty sure lightning bugs don't have teeth, but apparently they do love nectar. If Ray were not fictional and available for dinner, I'd def have to make something sweet like nectar but also something that he wouldn't need a whole head of teeth to enjoy.

This Sweet Cajun Creamed Corn dish is just that and more! I'm going to go ahead and ask you to bookmark this page for your upcoming Thanksgiving or Christmas spread because it's the per…

Country Fried Steak

Why do Jedi turn to the dark side? I'm not much on Star Wars but from what I can remember about at least one of the recent films is that Ben Solo's less than perfect relationship with his parents, Han and Leia, was filled with perceived disappointment. The fear of Ben not living up to their expectations bred to hatred and thus he found himself on the dark side.

How do you pull someone out of fear and hatred? I'm not sure you do, but if one were willing to put the emotional labor into making such an attempt, I'd imagine the best…

Frito Pie

'Race for the Pies' by The Flaming Chips
I cannot wait to see what every one else does for today's prompt. Food Song Pun is by far my favorite MoFo prompt of all time and  I think I nailed it while sticking to my Southern theme.

Frito Pie is a Southern snack made of corn chips, chili, cheese, and onions. As I recall the only place I ever saw Frito Pie was at the concession stand of my high school basketball games. The sold for only $4 and there was always a line of students and parents waiting for the treat. The booster club moms working the concession stand served Frito Pie…

Blood Sangria

In case you didn't know Sci-Fi/Fantasy is my preferred book and movie genre. There are so many options for today's MoFo prompt: I thought about making popplers from Futurama or Spice from Dune. I even thought about making a vegan human since humans are the main course for Audrey II in Little Shop of Horrors. You don't even want to know how weird and dark that thought train was. In the end it was that very weird thought train that brought us to blood. Human blood (and occasional rat blood) is the meal that satiates Lestat and Louis in Anne Rice…

Boiled Peanuts

How could a person choose one single character from TV, books, or film to call their favorite? I mean there are def characters that stand out for me, but how do you choose one?! I love Phoenix from Nnedi Okorafor's The Book of Phoenix and her unwillingness to compromise her powerful superhuman self. I strongly identify with Woodpecker's rebellious spirit in Tom Robbins' Still Life With Woodpecker. But futuristic desert food and tequila don't really follow along with my self-imposed theme of Southern food. Keeping my theme in the front of my thoughts…

The Sopranos is the best television of show of all time. Period. Full stop. This is not an invitation to debate the issue because if you're not on team Sopranos you're wrong. Plain and simple. Have you seen it? I sure hope so.

Whether you've seen the series or not, you should know that the food in the show is a big character for me. Almost every major scene is based around food: Christopher and the cannoli incident at the pastry shop; Anthony Jr and the fucking ziti; Livia's hatred towards "Northern" food; Pauly's tactless request for Macaroni …

Alabama Lane Cake

Vegan MoFo: It's that time of year again! Participants are given daily prompts and then post about it. If you need more info check out the MoFo website and get hip (click here and then come back). Today’s prompt: Showstopper.
So you want a showstopper? Look no further this Alabama Lane Cake invented showstopping. This cake is also called a Prize Cake (because it won some big fair or something a long time ago). The Alabama Lane Cake is for special occasions only (think: weddings, 60th anniversaries, 100th birthday; big celebrations). It has bourbon laced through out the cake that is not cooked out so be careful how many slices you consume.

This is a double show stopper because it's considerably less labor intensive than other tiered cakes. In the South we have a knack for short cuts when it comes to cooking…

Beet and Pink Lady Apple Sandwiches with Horseradish Curried Mayo

Vegan MoFo: It's that time of year again! Participants are given daily prompts and then post about it. If you need more info check out the MoFo website and get hip (click here and then come back). Today’s prompt: Afternoon Tea.

Confession: I don't know nothing about no Afternoon Tea. I didn't have pretend tea parties when I was a kid and I've never attended such an event ever. Honestly, I had to google "Mary Berry." In my googling adventure I found lots of stuff on pastries and "dainty" sandwiches. To be frank, I'm tired of baking and "dainty" just ain't my thing.

I had a fleeting thought that I should share an authentic Southern Sweet Tea recipe , but ultimately decided to save my family from all that sugar. Besides you can't get Milo's Sweet Tea here …

Crustless Summer Quiche

Vegan MoFo: It's that time of year again! If you don't know what's up, allow me to give you a brief overview: short for the Vegan Month of Food, Vegan MoFo is an annual blogging event about all things vegan. Participants are given daily prompts and then post about it. If you need more info check out the MoFo website and get hip (click here and then come back). Today’s prompt? Technical challenge: Quiche.

When I was a little in Alabama, I often heard quiche referred to as "egg pie." It took me awhile to realize they were the same thing. I never really got to the bottom of it, but why call it "egg pie?" I mean quiche rolls off the tongue with much more ease.

Anyway, I feel less out of my element on this prompt. I lack confidence in my baking skills but damn do I know how to rock a quiche or shall I say "eggless pie." Um but like surprise I am not big on the pie crust. It takes too much work and I'm shit at it; so most of the time when I make …

Cornbread with Sage, Fig, and Mozzarella

Today’s prompt: bread.

By now you've probably come to the realization that when I confessed that I was a terrible baker, I wasn't exaggerating. I've just never had good luck with following the rules of baking, or cooking "rules" in general, for that matter. As a matter of fact, I'm pretty sure this cornbread is fixing to get my Southern card revoked.

As a youngin in Alabama I remember cornbread being present in some form or another at nearly every meal. There are usually only a few varieties: johnnycakes, hushpuppies, cracklin cornbread, cornbread with corn kernels, cornbread pudding and cor…

Curried Carrot and Smoky Mushroom Hand Pies

Today’s prompt: pastry.

Fried Hand Pies are an old-fashioned tradition in the Deep South. There are some Southerners who will say the only authentic Southern hand pie is the one made from canned biscuit dough and filled with fruit and fried in a cast iron. And if this is the hill y'all wanna die on all I can say is bless your heart.

I call this an authentic Southern hand pie for a few reasons:
I made it;I'm Southern;it fits in your hand; andit's encased by pie crust.  But literally nothing else about these flavor bombs are considered traditional. Again I used Bob's 1:1 Gluten Free Baking Flour because …
