RAW: Sushi with Cauliflower Rice and Spicy Mayo

Eating raw hasn't been that difficult for me. The hardest part about eating raw is trying to have your friends over for dinner, especially the non-vegan friends. Over time I think I've overcome my friends' objections to vegan food but you start throwing raw food on them and they get a little sketch. Which is totally what happened to me this week. BandMan invited his oldest friend over for dinner (they've been friends since they were like 2 years old, or something crazy like that) and it was the first time I had been given the opportunity to cook for him. But I'll be damned I'm right in the middle of a raw cleanse. I knew cooking food for them to eat and preparing a raw dinner for myself would be a little too tempting for me, so I started trying to figure out what I could make raw that everyone would enjoy and sushi seemed to be the only answer that made any sense.

Big stuff is happening VegHeads and I'm pretty stoked on it.

Treefort Music Festival is next week and I've heard rumors that there are going to be way more vegan options available this year. Food trucks have finally come to their senses and started having veg options on their menus. Also, I hear there's going to be a nightly brunch from midnight to 4am at the El Korah Shriner's in which rumor-has-it they will be offering tofu scramble! On top of all that happiness, ChefMom will be catering food for the Artist's Lounge, and since I'm an artist, I'll have access to that too. So what I'm saying is: I'll be covering all the vegan food I can find at Treefort 2015; from the Artist's Lounge to the Food Trucks.

Ethiopian Chickpeas over Polenta Cakes

The most popular recipe I've put up on Vegan4One is definitely these Broccoli Polenta Cakes. It has over 10,000 views and that number grows every day. According to the stats, this recipe posted 10/2012 still gets at least 50 views a day. You'd think with it's crazy popularity I'd post more similar recipes but since then I've only posted one other polenta recipe and it wasn't very popular (which totally boggles my mind because it was one of the most delicious things I've ever made).

Anyway, so here's an attempt to make a similar recipe to my most popular one that tastes totally different but is equally as awesome!
