Thai Inspired Sweet Potato Noodles w/Sriracha Peanut Sauce

Hooray for spiralizers! They seriously have the coolest job. Well I guess the coolest job is eating what they produce; like this crazy-awesome, super flavorful, but still pretty damn healthy for you, dish.

That's right more sweet potato noodles. Why because I like them ok. And also, I happened to make too many sweet potato noodles on the first night I used my spiralizer (you remember the Pesto Sweet Potato Noodles post?). Subsequently, I made two different sauces, and two different posts about it. BECAUSE I CAN, OK?!

The Noodles

1 1/2lb spiralized sweet potatoes
2 tbsp sesame oil
salt and pepper, to taste
  1. Preheat the oven to 400
  2. Coat your sweet potato noodles in sesame oil and sprinkle with salt and pepper.
  3. Cook in oven for about 12 minutes.

The Sriracha Peanut Sauce

2 tbsp peanut butter
2 tbsp Sriracha sauce
2 tbsp coconut milk
1 tsp sesame oil
1/2 tsp apple cider vinegar
1/2 tbsp maple syrup
1/2 tsp turmeric
  1. While your noodles are in the oven blend all these ingredients together.
  2. Gently toss the sauce with your noodles and return to the oven for about 5 more minutes.
  3. eat.
