[Not] Bailey's Irish Cream

Happy National Irish Coffee Day! I'm beyond stoked that I'm celebrating with this wonderful vegan substitute!

See every time we wake up at the family cabin, BandMan's folks have the coffee and the Bailey's all ready for consumption and I'm always secretly kinda jelly about the Irish Cream in their coffee. Not in an angry way, of course, but totally in the "man I really wish that was vegan" kinda way.

And then it dawned on me, "wait a minute, why can't it be vegan?" So here we are: full damn circle back to topic at hand; Bailey's Irish Cream, VEGANIZED.

I'm totally gonna have to make this for our future cabin visits. It's seriously so good.

1 can full-fat coconut milk
almond milk
1/2 c raw cane sugar
3/4 c super strong coffee
1 c whiskey
pinch of salt
  1. In a large pot, pour in the coconut milk and then fill that can with equal parts almond milk; whisk and add the sugar. Bring to a simmer for about 10 minutes. 
  2. Pull your sugary-milks off the heat and add in your super strong coffee, whiskey and salt.
