Vegan MoFo 19: Breakfast Shrooms on Toast

I am not the biggest fan of breakfast. I mean I eat it everyday, but in the morning when I'm pre-coffee the last thing I can think about I seating. In fact, the only thing I can think about is getting coffee in my body.

So breakfast for me is usually fairly simple: a piece of fruit, oatmeal, leftover supper from the night before, etc. most of the time I have tofu scramble in the fridge just dying to be reheated and ate, but on this particular morning, I was all out. Thus, my new favorite breakfast dish was born.

If you're like me and you love the green, add some spinach or kale to make this the best damn breakfast ever.

1 onion, chopped
1 1/2 tsp garlic powder
3 c sliced oyster mushrooms
2 tbsp fresh lemon juice
Salt and pepper, to taste
Parsley
2 slices of your favorite bread, toasted

  1. Sauté the onion in a pan until the onion starts to brown. Add the mushrooms and sprinkle in that garlic powder.
  2. Cook for about a minute and then add in that lemon juice. Cover the pan and cook until the shrooms are at your liking.
  3. Remove from heat. Toss in the parsley, salt and pepper.
  4. Rest atop some buttered toast and enjoy with a warm cup of coffee.
You can never have too many shrooms. They are filled with protein.

  1. This is beautiful. I love mushrooms, too. Lately I have been making bread weekly, using a recipe from Bread Alone, and right now I can't think of a better way to eat it than just as you've shown here.
