Fairy Tale Porridge

This is a quick breakfast and it's packed with fiber to keep your digestion rolling along and the apple-pumpkin combo is über pleasing. Sprinkle a tablespoon of ground flax seed for some added crunch and to ensure you're getting your daily dose of those healthy and important omega 3 fatty acids.

1 large apple, peeled, cored and chopped into a large dice.
1 cup of berries (I used 1/2 cup of strawberries and 1/2 cup of blackberries)
1/4 cup raw pumpkin seeds, soaked overnight

Drain pumpkin seeds and toss into a food processor with other ingredients.

Makes 2 servings: 159 calories

High in vitamin C
