When it comes to spring in the South, you'll find plenty of seasonal green vegetables to go around, but cucumbers always seem to be in abundance. This Creamed Cucumber Salad is a very popular Southern dish. It's typically made with sour cream but this prompt said "light;" so I've made this salad with Forager's plain cashew plant-based yogurt and it did not disappoint y'all!

I don't know what the deal is with the Deep South and tomatoes but there is some kind of love affair going on here. Summer in the South was always filled with fresh tomatoes every where you looked:  tomato pie, tomato gravy, tomato salads, and sides of freshly sliced tomato at every meal. No lie - I did not like popcorn as a kid. Now it's my go-to snack for the occasional TV night. But I don't like just any popcorn. I only like the popcorn my partner makes on the stove top and I love to add a lot of flavor.

I love Ray the Lightning Bug in The Princess and The Frog. He's selfless, a hopeless romantic, and missing quite a few teeth. Pretty sure lightning bugs don't have teeth, but apparently they do love nectar.
