Chickpea Gnocchi with Faux Pesto and Raspberry Sauce

Hello and welcome back to yet another Vegan MoFo post. This week is my fave so far because I live this week every week. I'm frugal AF and challenge myself daily to make meals out of nothing because I'm just not a big fan of the grocery store.

Today's prompt is Frugal, but Fancy. In keeping with my self imposed daily challenge, I created this entire dish from what I happened to have in my kitchen and some of the components were actually food gifts (my fave kind of gift btw) from my friends and family. Now that's frugal.

Gnocchi is almost always fancy especially when it's homemade. This gnocchi is gluten free and is served with my cheap version of pesto (pestfaux?) and my fave savory raspberry sauce. Also I made this for breakfast today. What a fancy Saturday morning.

Homemade GF Gnocchi

8 oz of potatoes, skinned boiled mashed and cooled
1 c chickpea flour
1/4 c nutritional yeast
1 garlic clove, minced
pepper
  1. Mix all the ingredients together to form a dough ball.
  2. Quarter the dough ball and roll each quarter into 1 inch thick ropes.
  3. Cut the ropes into 1 inch pieces.
  4. Get some salted water boiling and toss your gnocchi in there. When they all float they're done.
  5. Plop your strained gnocchi in a non stick pan and saute until golden on each side.

Faux Pesto

3 c arugula
1 c toasted cashews
1/4 c nutritional yeast
1 garlic clove
juice from 1 lemon
1/4 c olive oil
pepper, to taste
pinch of cayenne
  1. Throw all ingredients into your blender and pulse until you get a great consistency.

Savory Raspberry Sauce

5 oz of raspberries
1 1/2 tbsp red wine vinegar
1 tbsp maple syrup
1/2 tbsp stone ground mustard
  1. Simmer all ingredients in a non-stick sauce pan on medium heat until it all turns to goo. Roughly 15 minutes or so.

Can't get enough? I'm all over the place, let's follow each other (cause that doesn't sound creepy, at all!) InstagramTwitterFacebook, and Pinterest.  Nothing makes me heart more full than when people let me know they've tried my recipes. If you wanna help make my heart happy you can # vegan4one, comment on the post, post on my wall, tweet at me; whichever socials you feel comfy with.

All the love,
