Coconut Macaroons

Welcome back! Today's prompt is "Emoji Inspired." 

As I swiped through the emojis on my phone, my brain was swirling with all these different ideas regarding which emoji to choose and what kind of food to make. But then kinda out of nowhere, I noticed an emoji that I hadn't quite noticed before: coconut. Obviously, I hadn't been paying attention during my past emoji searches because I feel like this is the first time I'm seeing the cute lil guy. 

No matter, it just so happens that I have a shit ton of coconut stuff in my pantry right now. And bonus: any time I can pull something cool out of my bare, desert-like, kitchen without going to the store, I kind of feel like a vegan chef superhero, badass (that's frugal af with a little social anxiety and some extra frugality sprinkled on top).  

Speaking of Sprinkles:

These Coconut Macaroons are my fave cookies.  Minus the cooling, they take like 10 minutes to make. They're moist, versatile, cheap, delicate, and people who hate coconut still think they're bomb (looking at you, son).

This recipe makes 12 cookies and mouths very happy. 

Coconut Macaroons Recipe:

1.5 c unsweetened shredded coconut
1 tbsp coconut flour
pinch of salt
1/4 c maple syrup
2 tbsp coconut oil, melted
  1. Preheat to 350.
  2. In your food processor, pulse all ingredients into a batter. 
  3. Use a tablespoon to scoop out the batter into 12 small balls on to a parchment lined cookie sheet. 
  4. Bake for 7 minutes - cool for an hour - EAT.
