Fried Peach Pasta Salad w/fresh mangoes & blueberries


But for 24,240 hours, you've patiently waited for me while I explored other things like getting married, expanding my reach on Instagram, getting a promotion, going on many tours with my band and recording two amazing (if I do say so myself) albums. And now I'm back for a little while because I missed you and I hope you missed me too.Speaking of missing stuff: ya know how in the Summer heat you can wait for Fall so you can wear your favorite sweater? And in the dead of Winter all you can daydream about how tan you're going to be come Summer? Well, Boise is officially entering the phase of Summer that makes you beg for Fall. With temps over 100 everyday it can be hard to cook, eat, or just function in general.

This quick and cooling salad is a one stop shop for a meal. It's got everything you need for it to be a successful single main dish, but it def works as side dish too.


The Fried Peach Pasta Salad with Fresh Mangoes and Blueberries is recommended for those of you who could see yourself sneaking into a fancy hotel with a swimming pool on a 115-degree day and ordering mojitos poolside on Room 214 (but paying in cash before you dip out, cuz it would be wrong otherwise).

Fried Peach Pasta Salad w/fresh mangoes & blueberries


4 cups brown rice penne, cooked 
1 tbsp oil
3 peaches, halved
red chili flakes, to taste
3 lemons, juiced
1 tsp of lemon zest
4 tsp stone ground mustard
4 garlic cloves, minced
5 oz arugula
2 c blueberries
1 c chopped mango
salt and black pepper, to taste

  1. heat up that tablespoon of oil in your fave frying pan or cast iron. Sprinkle the cut side of the peaches with a bit of red chili flakes and place cut side down in to that hot AF oil. Keep your eyes on those cuties cuz they'll burn quick. I think mine got these perfect in only 2 or 3 minutes. Set aside to cool while you compile the rest of this blissful beast. 
  2. Whisk together the lemon juice, zest, mustard, and minced garlic to make a dressing. 
  3. Toss the remaining ingredients with your dressing and top with your friend peaches.
Upon embarking on plate 2 of this delish salad my mother and I discovered that each serving should be drizzled with balsamic reduction - the bal redux elevated this salad to a-whole-nother place.

RESTAURANT REVIEW: Firenza

I’m not gonna lie to you my pizza was very bomb but everything else was very not.

Firenza (located in downtown Boise) looks, feels, and acts like a corporate fast food franchise because it is a corporate fast food franchise but it’s a corporate fast food franchise that offers vegan pizza, and if it wasn’t for the damn up-charges it would be, on the cheap. 

My guests and I walked through the front door of Firenza (which was kinda hard to find to be honest) and I immediately got thrown back to my high school cafeteria and not in a pleasant way. Imagine bare white walls and what looks like a giant high school logo painted over a pizza assembly line. 
We approached the pizza assembly line and I immediately told the staff member who welcomed us that this was our first time visiting the restaurant and asked for guidance. They said ok and blankly stared at us until I eventually broke the awkward silence and started asking about vegan options.

Savory Taco Pancakes

Below is an actual text I sent to my partner and son, but first some context: I practice Intermittent Fasting every day, so breakfast doesn't get served until noon or later daily - thus it's not really referred to as breakfast. We usually refer to it as "first meal" and sometimes brunch. My kid and partner can't really handle the late first meal on the weekends, but they deal surprisingly well. While I was making first meal today, my son was snacking on leftover cold pizza from yesterday and my partner was chugging a blueberry protein shake.
