Thai Cashew Salad 4 One

I know a lot of people think veganism is only about eating salads - it's not - but sometimes you do get a good craving for one (or at least I hope you do, vegan or not). This salad is one of those salads you'll crave over and over again. It's just so damn delicious, fresh, and filling.

In the past, I've talked about eating a "Big A Salad" every day. If it weighs in around roughly 2 pounds then it classifies as a "Big A Salad;" this is a "Big A Salad." If you want to eat this salad but don't want it to be the main course just make smaller portions, ok?

Just try it once, you'll be hooked.




Dressing

1 tbsp peanut butter
1 garlic clove, minced
1/2 tbsp agave
1/2 tsp ginger
1/2 tbsp rice vinegar
1/2 tsp sesame oil
1 tbsp water
  1. Mix together and set aside

Salad

1 c salad greens, chopped
1/8 head red cabbage, chopped
1 carrot, sliced
1/4 yellow bell pepper, sliced
1/4 red bell pepper, sliced
2 tbsp cashews
2 tbsp shelled edamame
1 green onion, chopped
cilantro, chopped
  1. Toss all these ingredients with the dressing above. Top with sriracha - optional, but totes recommended.
