Chocolate Pancakes with Blackberry Compote

Sunday morning pancakes are the best, are they not? It's a scary feeling to wake up and find you have no maple syrup, which is exactly what happened to me this morning. Have no fear when you have no maple syrup make fruit syrup. It's pretty easy and most def worth it.

Get on it.

1 c coconut milk 
1 banana
2 tbsp vegan butter, melted
1 tsp vanilla
1 c flour
1/3 c cocoa
1/4 c turbinado sugar
1/2 tsp baking soda
1/2 tsp salt
water, for thinning batter if necessary
  1. Combine the coconut milk, banana, butter, and vanilla in your blender and mix it up. 
  2. Combine the flour, cocoa, sugar, baking soda, and salt in a big bowl. Stir in the coconut milk mixture. After you've mixed those guys together, add water to thin out your batter if needed. I used about a quarter of a cup. 
  3. Turn your range top burner on medium and get a skillet real hot. Pour 1/4 cup of batter in the skillet and flip when the one side done. Shouldn't take longer than 1-2 minutes per side. 
  4. Prepare the compote.

Blackberry Compote:
1 tbsp vegan butter
1 pint of blackberries
1/4 c turbinado sugar
1/4 c water
1/2 tsp ginger 
1/2 tsp cinnamon
  1.  In a skillet, melt your butter and add in the blackberries. Cook for a minute or so and then add the sugar. 
  2. After another minute or so, add in your water, ginger, and cinnamon. Let simmer for about 3-5 minutes.
Top your pancakes with the blackberry compote and some coconut flakes.  Oooo-la-la.

Fysh and Chips

Look a lot of people are dependent on salt to enhance the flavor of their food but here's the deal - too much salt (like anything else) is not awesome for your body, or your head, or your brain, or your mind (claps for anyone who can guess what movie that loose quote is from). I could go in to a long lecture-speech on the effects of eating too much salt but y'all ain't here for that and google is free. 
When you're ready to reduce your salt intake look for other flavor enhancers to make your meal's best attributes (a.k.a. flavors) P O P !
