Gourmet Beet Sandwich

There's nothing wrong with an occasional sinful, over-the-top, crazy good, gourmet sandwich right? Well if there is something wrong with it...well you know what I'm saying.

The reason I called this sandwich sinful is because of how little effort was required in putting it together. The flavors taste like this sandwich has taken a life time to make, but the 30 minutes that I actually put in to it was worth it. I'll make this again. Best believe it.

olive oil
2 beets, peeled and sliced
1/2 c sherry
1/2 c water
1/2 tbsp coconut sugar
zest from 1/2 lemon
2 garlic cloves, minced
Splash apple cider vinegar
1/2 tsp thyme
salt and pepper, to taste

  1. Throw all these ingredients in a saute pan with a lid. Cover and let simmer for about 30 minutes on low-ish heat.

Meanwhile, while your beets are cooking:

olive oil
1 onion, sliced
1 c sliced mushrooms
  1. saute on low-ish heat until good and caramelized
1 c pistachios
2 c baby spinach
1 tsp horseradish
  1. blend all ingredients into a spread for your sammich.
Baby spinach

Assembly of your sammich should be fairly easy. Take two slices of bread, we used a vegan marble rye, fry it up until golden brown and crispy; spread that delectable spinach-pistachio concoction all over the two pieces, throw in some of the beets; top with baby spinach, avocado slices,  and the caramelized shrooms and onions. Chow down.
