Banana Blackberry Muffins

Today is the last day of Vegan MoFo 2012, and I'm totally going to miss all of you! If you think you might miss me too, don't fret! You can subscribe to my posts via email just by entering your email address in the box to the right, or you can use the facebook to keep up with the posts.

I have to say I have fully enjoyed myself during this vegan month of food. There have been some great dishes and some awful ones (y'all didn't hear about those, obviously).

Today, I will be doing a double posting one spectacular dish that I totally recommend for dinner tonight, and this one. Banana Blackberry Muffins. These guys are sweet because they have no sugar in them (see what I did there?). I used maple syrup instead, and I just think they turned out real swell.

If you need a quick breakfast for mornings on the go make sure you have some of these stashed away and on hand. They are the bee's knees.
I topped these muffins w/pumpkin & sunflower seeds
and I filled them w/heaven.

3 bananas
1/4 c oil
2 c whole wheat flour
1 tsp salt
1 1/2 tsp baking soda
3/4 c maple syrup
1 carton blackberries
Pumpkin seeds, for garnish
  1. Preheat the oven to 350.
  2. Mash the bananas and mix with your oil and syrup.
  3. In a separate bowl mix together flour, salt, and baking soda.
  4. Combine your dry ingredients with the wet and fold in the blackberries.
  5. Scoop a few tbsp of batter into muffin tins and give them a sprinkling of pumpkin seeds.
  6. Pop em in the oven and bake for about 20 minutes or so.

Enjoy w/strong coffee, good company, & great music.

  1. Soooo, I have made these a few times for my BikerManFriend and we are both in love with this recipe. It is the perfect energy booster when on a long ride. I love that you can literally taste the good healthiness that is in each one. I've tried adding almond butter and substituting raspberries for the blackberries. Both experiments were fantastic. Keep 'em comin'!

    1. Holy shit. This makes me so happy. Also, hey do I know you? You looks familiarized?

I'm trying your subs. Thanks for the recommends.

    2. Totally familiarized actually. I'm friends with your BandMan and such. We may have only met a couple of times though.

This blog equals foodgasms all around.

    3. any friend of BandMan's is a friend of mine. don't be a stranger.

food porn tends to lead to foodgasms, and I'm not complaining.
