Herb-Banana Smoothie + Raw Spaghetti + Raw Key Lime Pudding

Recently, I have been reading a lot about the benefits of a raw food diet; boost in energy, weight loss, anti-aging and some people believe it can reverse cancer, type 1 and 2 diabetes, etc.

This curious little vegan wants to know what all the fuss is about so I've instituted a 14 day Raw Challenge for myself.

Today is Day 1 and this is how it's unfolded...

Breakfast: Large herb-banana smoothie
1 tablespoon of fresh basil, minced
1 tablespoon of fresh rosemary, minced
2 bananas
1 cup of water

Blend all ingredients

Snack: Rawma Bar Pumpkin Agave 
Lunch: Big "A" Salad
6oz of romaine
1/2 red bell pepper
1 cucumber
1 celery stalk
6 black olives
1 carrot
3 cherry tomato
A heaping handful of alfalfa sprouts
Salad dressing: Oil, balsamic and dill

MidDay Snack: Smoothie
1 peach
1/2 carton of strawberries
1/2 carton of raspberries 
raw vegan hemp protein powder

Dinner: Zucchini Pasta with Marinara

The sauce:
1/2 cup of sun-dried tomatoes
4 medium tomatoes, chopped
1/4 cup of sun dried tomato powder (grind dry sun dried tomatoes in a coffee grinder. 1 cup = 2/3-3/4 a cup of powder)
1/4 cup of fennel, chopped
3 tablespoon red onion, chopped
1 clove garlic
2 teaspoon lemon juice
Italian seasoning
Pinch of cinnamon

The pasta:
5 zucchini peeled with a peeler

Soak the dried tomatoes for an hour and drain water. Place all ingredients in a blender and pulse until combined. Serve on top of zucchini.

Dessert: Key Lime Pudding
2 avocados, pitted and peeled
1/2 cup raw agave nectar
1/3 cup fresh key lime juice
1 teaspoon fresh lime zest

Blend all of the ingredients until smooth and creamy.
