Korean Slaw

I have always been a fan of Asian inspired food. It hasn't been until recently that I have started exploring the ingredients that make great Asian food. This Korean inspired cabbage salad with tofu would be a delicious and healthful meal, or snack, that doesn't break the bank. You'll spend under $1.50 per serving.

One serving consists of four ounces of tofu and one cup of the salad. It has about 250 calories per serving. It's very low in cholesterol, high in calcium, high in manganese, very high in vitamin A and very high in vitamin C.

Ingredients for 4:
16 oz tofu
1/2 cup soy sauce
5 cups shredded cabbage
1/2 cup shredded carrot
3 green onions, minced
2 cloves garlic, minced
1 tablespoon minced ginger
1 tablespoon brown sugar
1 teaspoon chili paste
1/4 cup rice vinegar
3 tablespoon toasted sesame oil
3 tablespoon water

  1. Preheat 375 spray baking sheet with non stick spray
  2. Cube tofu and toss with 1/4 cup of soy sauce. Bake for 30 minutes
  3. Large bowl: combine cabbage, carrots and green onions. Set aside.
  4. Small bowl: Combine the rest of the ingredients to create a dressing and pour over the cabbage. Toss to combine and let salad sit for 10 minutes to 24 hours to marry flavors.
  5. Serve topped with tofu.
